   RECIPES

HOT BROWNS AT THE HOLLY HILL INN
Chef Ouita Michel

Mornay Sauce
Yield: 1 quart — enough for 6-8 Hot Browns

Ingredients
2 ounces butter
2 ounces flour
1 quart of milk
8 ounces white Cheddar cheese
1 tsp. dry mustard
2 tsp. Worcestershire sauce
Salt, white pepper and cayenne to taste

Method:
Melt the butter in a sauce pan. Whisk in the flour.
Add the milk whisking as you go.
Let the sauce simmer over a very low flame for about 10 minutes. Add the cheese, dry mustard, Worcestershire and season with salt, white pepper and cayenne

To Assemble the Hot Browns—for 4

Ingredients
1 quart of Mornay sauce
1 pound fresh roast turkey, sliced
12 slices good quality white bread, cut in half on the diagonal and toasted dry
2 tomatoes cut into wedges
1/2 cup grated Parmesan cheese
8 strips of bacon cooked until just under crisp

Method:
In a baking dish, shingle the three pieces of toast. Dab each with a little Mornay sauce
Lay 4 ounces of turkey—or a little more if you like, over the toast and sauce with the Mornay sauce.
Cross the bacon on the sauce. Dust with grated Parmesan and bake at 350 degrees about 15 minutes until all is hot and sauce is bubbling.
Serve hot with the tomatoes on the side. We set the individual casserole dishes on a large plate lined with a doily to serve.


BUTTERMILK CHESS PIE
Makes 2- 9-inch pies we cut into 1/8s

Ingredients:
6 eggs
1 1/2 cup sugar
6 Tbsp. flour
6 Tbsp. butter, melted
3 cups buttermilk
1 1/2 tsp. vanilla
Zest of one lemon -- optional

Two of your best homemade pie crusts, unbaked

Method:

Mix the eggs and sugar together until well combined - but don’t beat hard.
Stir in the flour.
Mix in the butter.
Whisk in the buttermilk.
Season with the vanilla. And sprinkle the tops with a little ground cinnamon.
Pour into the pie shells, bake at 350 degrees about 30-45 minutes until a knife comes out clean. They will still be a little soft in the middle.

We serve with whipped cream and strawberries.

Morning Edition Anchor: Jennifer Nime Palumbo

Jennifer Nime PalumboJennifer Nime Palumbo is the anchor of the Fox 56 Morning Edition which airs weekdays from 7-8 a.m. Viewers of the Fox 56 Ten o’Clock News may
recognize her because she was on the newscast with Marvin Bartlett for six years.

Jennifer grew up in Cincinnati, Ohio. Her passion for journalism began in high school as editor of the school newspaper. She then studied broadcast journalism at Ohio University’s E.W. Scripps School of Journalism where she graduated Phi Beta Kappa. After college she headed to London, England to work on the assignment desk at ABC News.

In 1994 Jennifer returned to the U.S. where she landed her first on-air job at the CBS affiliate in Hazard, Kentucky. There she was a co-anchor of the morning news, as well as a reporter, videographer and producer. Jennifer came to Lexington in 1995 to work for the CBS affiliate. There she worked her way up from weekend producer to co-anchor of the 5 p.m. and 11 p.m. newscasts. During that time, she also worked with Marvin Bartlett on the Fox 56 10 O ’Clock news.

In 2005 Jennifer decided to take a break from TV news to spend more time with her family. She is married to Joe Palumbo, President of the Palumbo Lumber Company. Their daughter Anna was born in November 2004, and John Anthony Palumbo IV joined the family in July 2006.
In 2007 Jennifer decided to return to the business for the launch of the Fox 56 Morning Edition. She says she is grateful to be back on the air on WDKY with a job that lets her follow her passion and still spend quality time with her family.

Jennifer believes in giving back to the community. She is a board member of the Lexington Dream Factory, the Jarrett Mynear Fund and the Susan G. Komen Breast Cancer Foundation. She is also a member of the Junior League of Lexington and a volunteer with Jarrett’s Joy Cart and Cardinal Hill Rehabilitation Hospital.

Jennifer and her family are members of Calvary Baptist Church. She is an avid sports fan who enjoys playing tennis and golf. She also loves to travel,read, work in her garden and spend time with her family and friends.

Chris BaileyChris is a native of Salyersville and a graduate of Morehead State University. He’s had a life-long interest in weather. He does double duty, also appearing on newscasts for WKYT. Chris and his wife, Scarlett, have one daughter, Wynter.
